Crafting the Perfect Menu for Valentine’s Day

Looking for 8 food connoisseurs that are interested in creating the perfect menu - just in time for Valentine's Day. Instructor Dallas Niles will provide instruction that will include basic terms, techniques, and recipes. At the end of each session, you will have a dish to take home.

Session 1, Night 1: Intro to Course; Facility Tour; Sanitation Overview; Knife Skills and Prep Work; Mire Poix and Bouquet Garni; Thickening. Dish to take home is pan-cooked chicken breast in pan sauce. Session 1, Night 2: Vegetable and Farinaceous Product Intro; Sweet Potato and Beet Hash; Basic Risotto; Polenta with Shrimp. Dish to take home is garlic fried shrimp with Polenta Florentine.

Session 2, Night 1: Chicken Stock; Chicken Butchery (Demo and Individual); Mother Sauces; Chicken Cacciatore; Strain Stock. Dish to take home is Chicken Marsala or Chicken Cacciatore. Night 2: Beef Tip Stew Intro: Moist Heat and Dry Heat Cookery; Beef Cut Lesson and Flank Steak. Dish to take home is beef tip stew.

Session 3, Night 1: Baking Intro (Cake Icing Lesson and Frosting Your Own Cake); Quick Breads. Dish to take home is veggie stew, biscuits with a frosted cake. Night 2: Seafood Intro; Calamari and Cocktail Sauce; Salmon Un Papeotte; Clams 3-Ways; How to Garnish Seafoods/Paring Side Dishes. Dish to take home is Salmon Un Papeotte.

These two-session classes are being held Tuesdays and Thursdays, January 10 and 12, 2017 (Session 1) , January 17 and 19, 2017 (Session 2), and January 24 and 26, 2017 (Session 3) from 6:00 to 8:00 p.m. at the Education Council’s Port Allegany office. The cost is $100 per person per 2-class session and includes instruction, supplies and food to take home. Participants are asked to please restrain their hair and bring containers to take meals home.
